Kernel Rollback how to set older kernel

I am new to Calculate and Gentoo after upgrading kernel to 3.19.1 I wanted to go back to 3.18.9. I followed Kernel compilation guide in 2.8 Customize your kernel with cl-kernel. Now my machine reboots in to 3.19.1 (and it’s not good broken) but I do not have 3.19.1 I tried everything I could to remove 3.19.1. I cant boot straight into 3.18.9 I have to tap down during boot to go to 3.18.9. How do I make it boot right into 3.18.9?

Default Grub2 selects the latest version of the kernel.

If you do not want to use 3.19.1, remove it from the directory /boot/ and /lib/modules/
